Avocado Toast with Poached Egg

1 ripe avocado
2 eggs
2 slices of whole-grain bread
Salt and pepper to taste
Optional toppings: crushed red pepper flakes, fresh herbs, or a sprinkle of cheese

Pot for poaching eggs
Slotted spoon
Toaster or grill

  1. Poach the Egg:

    • Fill a pot with about 3 inches of water and bring it to a gentle simmer. Add a small splash of vinegar to help the egg whites coagulate faster. Crack each egg into a small cup or bowl.
    • When the water is simmering, gently pour each egg into the water. Cook for about 3-4 minutes for a runny yolk or a little longer for a firmer yolk. Use a slotted spoon to remove the eggs from the water and set them on a plate.
  2. Prepare Avocado Toast:

    • Toast the bread slices to your desired crispiness. While the bread is toasting, halve the avocado and remove the pit. Scoop the avocado flesh into a bowl and mash it with a fork. Season with salt and pepper to taste.
    • Spread the mashed avocado evenly onto the toasted bread slices.
  3. Assemble and Serve:

    • Carefully place a poached egg on top of each avocado toast. Season further with salt, pepper, and optional toppings like red pepper flakes or fresh herbs.
    • Serve immediately while the toast is warm and the egg is still soft.
