Avocado Toast with Poached Egg

1 ripe avocado
2 eggs
2 slices of whole-grain bread
Salt and pepper to taste
Optional toppings: crushed red pepper flakes, fresh herbs, or a sprinkle of cheese

Poach the Egg:
- Fill a pot with about 3 inches of water and bring it to a gentle simmer. Add a small splash of vinegar to help the egg whites coagulate faster. Crack each egg into a small cup or bowl.
- When the water is simmering, gently pour each egg into the water. Cook for about 3-4 minutes for a runny yolk or a little longer for a firmer yolk. Use a slotted spoon to remove the eggs from the water and set them on a plate.

Prepare Avocado Toast:
- Toast the bread slices to your desired crispiness. While the bread is toasting, halve the avocado and remove the pit. Scoop the avocado flesh into a bowl and mash it with a fork. Season with salt and pepper to taste.
- Spread the mashed avocado evenly onto the toasted bread slices.

Assemble and Serve:
- Carefully place a poached egg on top of each avocado toast. Season further with salt, pepper, and optional toppings like red pepper flakes or fresh herbs.
- Serve immediately while the toast is warm and the egg is still soft.
